Serves 4-6
- 2 Tbsp. extra virgin olive oil
- 1 lemon, juiced
- 1/2 tsp. minced lemon zest
- 1/2 honeydew melon, sliced
- 1/2 cantaloupe melon, sliced
- 3/4 cup blackberries
- 1/2 cup feta cheese, crumbled
- 3 Tbsp. fresh mint, chopped
- Sea salt to taste
- For the dressing: in a bowl, combine the olive oil, lemon juice and zest, and season with sea salt to taste.
- In another bowl, place melon slices and mix to coat with dressing.
- Please dressed melon in serving bowls.
- Top melon with berries, feta and mint.
