Bison Chili with Winter Vegetables

Ingredients: 

  • 1 lb ground bison
  •  1 cup diced butternut squash
  •  1 small onion, chopped
  •  2 celery stalks, chopped
  •  2 garlic cloves, minced
  •  1-2 tsp cumin
  •  1-2 tsp coriander
  •  2 cups broth
  •  Sea salt + pepper

Instructions: 

  1. .Brown bison in a pot. 
  2. Add onion, celery, garlic; cook for a few minutes. 
  3. Stir in squash, spices, broth, salt, and pepper. 
  4. Simmer for 20-25 minutes until squash is tender. 
  5. Serve!
