Ingredients
- 1 Large Sweet potato, peeled & cut into cubes (or shredded)
- 1 Red Onion, peeled & diced (or shredded)
- ½ of a Fresh Lime (squeezed)
- Savory Spices of your choice, such as:
- ½ tsp Coriander
- ½ tsp Cayenne
- 1 tsp Garlic granules
- 1 tsp Cumin
- 1 tsp Sea Salt
- Freshly ground pepper
- Freshly ground pepper
- A pinch of red chili pepper flakes (if you love spicy flavors)
- 2-3 TBS Coconut Flour
- 2 Eggs
Directions
Use a Food Processor to combine all ingredients, or use the shredded approach if you don’t have a food processor. You simply want to combine all the ingredients together.
Grab a waffle maker, heat it, and add some coconut oil to the griddle (alternatively, just make pancakes in a pan on the stove). *Batter will make about 2-3 Medium-Large waffles.
Cook & enjoy plated with an egg, avocado, or whatever your heart desires!
