Mashed Faux-Tatoes

Ingredients:

  • 1 Medium head fresh cauliflower (about 1 1⁄2 lb.)
  • 1⁄2 Cup butter
  • 1⁄4 Cup half and half
  • 3⁄4 tsp. sea salt
  • Black pepper to taste
  • Minced chives or scallions (optional)

Directions:

  1. Steam cauliflower in a steamer basket or a small amount of water in a saucepan until tender, and drain.
  2. In a food processor, blend cauliflower, butter, half and half, sea salt, and pepper until smooth.
  3. Transfer to a serving bowl and serve immediately.
