  • 2 large, ripe bananas, well mashed
  • 2 cups finely shredded, unsweetened, coconut flakes
  • ¼ cup coconut flour
  • 1/3 cup coconut oil, melted
  • 2-3 Tbsp. raw honey
  • 1-2 tsp. vanilla extract
  • 1 tsp. cinnamon
  • 1 Tbsp. grass-fed gelatin (optional)
  • Pinch of sea salt
  1. Preheat oven to 350° F.
  2. Place all ingredients in bowl and mix thoroughly until paste forms.
  3. Form into cookies, garnish with coconut flakes, and place on baking sheet greased with coconut oil (or lined with parchment paper).
  4. Bake 17-20 minutes, or until golden brown.
  5. Allow to cool and enjoy!
