Melon Mint Salad
Serves 4-6
2 Tbsp. extra virgin olive oil
1 lemon, juiced
1/2 tsp. minced lemon zest
1/2 honeydew melon, sliced
1/2 cantaloupe melon, sliced
3/4 cup blackberries
1/2 cup feta cheese, crumbled
3 Tbsp. fresh mint, chopped
Sea salt to taste
For the dressing: in a bowl, combine the olive oil, lemon juice and zest, and season with sea salt to taste.
In another bowl, place melon slices and mix to coat with dressing.
Please dressed melon in serving bowls.
Top melon with berries, feta and mint.
