Serves 4-6
- 2 cans sardines, packed in extra virgin olive oil (I like the Wild Planet brand)
- 4 garlic cloves, minced or 1/2 tsp. garlic powder
- 2 Tbsp. raw apple cider vinegar
- 1/4 cup extra virgin olive oil
- 1/2 small head shredded green cabbage
- 1/2 small head shredded red cabbage
- Sea salt and freshly ground pepper to taste
- In a large bowl, mash sardines with their oil, vinegar, garlic and extra olive oil.
- Add shredded cabbage and salt and pepper. Mix to coat cabbage.
- Chill salad in the refrigerator for 15-30 minutes, if desired.
