- 2 Large Brown Eggs
- 4 oz Horizon Cream Cheese
- 1 tsp. Stevita Stevia
- 1/2 tsp. cinnamon
- 1 tbsp ground flax seed
- 1 dash salt
- 1 square inch of butter 1/3″ high.
- In a small bowl, beat egg whites with electric mixer.
- In a large bowl, beat cream cheese until smooth.
- Beat egg yolks, stevita stevia, cinnamon, salt and flaxseed meal into cream cheese.
- Fold in the egg whites.
- Heat Cast Iron or Stainless Steel pan over medium low heat. Grease lightly with butter or another healing diet approved oil of your choice.
- Form pancakes using about 1/4 cup of the batter for each pancake. Cook until golden brown, about 2-3 minutes on each side. Don't rush – if the temperature is too high, the butter/oil used will burn and turn into a bad fat.
- Note: can be served with butter or mixed with low gi fruits.
