Sun-dried Tomato and Avocado Pesto Zoodles

Sun-dried Tomato and Avocado Pesto Zoodles

  • 3 medium zucchini, washed and trimmed
  • 1/4 cup cashews
  • 1 avocado
  • 1/2 cup basil, loosely packed
  • 1/2 cup sun-dried tomatoes (packed in oil, but drained), chopped
  • 1 tsp. garlic, minced
  • 1 tsp. red pepper flakes (optional)
  • 2 Tbsp. reserved sun-dried tomato oil
  • 1 Tsbp. filtered water
  • 1 tsp. pure maple syrup (stevia or honey can be substituted)
  1. Spiralize the zucchini into zoodles (noodles).
  2. Process all of the remaining ingredients in a high powered blender or food processor until smooth.
  3. Add the pesto to the zoodles and toss.
